I just wanted to wish everyone a Happy Labor Day. I hope everyone is having a great weekend. I had to work today but I have plans for the rest of the weekend. Krista and I are going to my sister’s on Sunday. On Monday, my sister, my niece, Krista and I are going shopping. And to take my niece to get her Build-A-Bear stuffed.
I got a quick recipe that somebody might want to try out this weekend. It’s for Homemade Orange Sherbert and it’s made in an ice cream freezer.
Homemade Orange Sherbert
- 2 Liter Orange Crush (you can also use sugar-free)
- 1 can of Eagle Brand milk
- 1 can of crushed pineapples (drained)
Pour in the Eagle Brand milk and the can of crushed pineapples. Then pour in the Orange Crush to the fill line of the ice cream freezer canister and stir. Then use the freezer as you would for ice cream.

Yesterday I was sick and stayed at home. I woke up feeling a little dizzy and it didn’t get any better after my shower. So I went back to bed and called in sick. I slept most of the day, so I got some needed rest.
I don’t know if it is vertigo or an inner ear infection. I’m feeling a little better today and I’m back at work but I don’t feel a 100%. I am still a little nauseated. Maybe it is something that will pass.

Yeah! The Indians won the game last night!!! We had been on a 22 game losing streak. The last two years, we have been playing in 5A and that’s against some really tough schools. But this year we are back in 4A and so we should stand a better chance of winning.
Last night was also Senior Night. So Dewayne and I escorted Krista out on the football field to be recognized. Most of the family came out to see Krista get honored, that’s Me, Dewayne, Kecia, James and Zach. My mama, my sister and my mother-in-law also came to the game. The band performed during half time and they did a really good job.
The next game is September 5 and I’ll let you know how the team does then.

Yesterday was the first pep rally of the year. Tonight is the first football game….I hope we win. Anyway, the senior moms (moms of 12th graders not elderly moms…lol) did a little dance routine to honor their senior…whether they were a football player, cheerleader or a band member. We had been practicing for 2 weeks on Tuesdays and Thursdays to learn the dance routine. The owner of the local dance studio choreographed it. We danced to “Girlfriend” by Avril Lavigne. There was about 23 of us in the group and the routine lasted about a minute. We all wore football jerseys and performed on the football field (and yes it was very hot). But we all had a really good time.

Dewayne was diagnosed with Diabetes yesterday. After using the monitor for a week, I sent the results to the doctor’s office. The nurse called me and said that after looking at the results the doctor believes that Dewayne is a Diabetic. So the doctor is putting him on a medication called Metformin that he takes one time a day after the evening meal. They also want Dewayne to lose some weight and start an exercise program. But the hardest part will be to change his way of eating. Dewayne loves everything fried (we are from the south and we love everything fried). So we all are going to be eating less fried foods and less breads, and more vegetables, more chicken and fish, and more whole grain breads and cereals. I will now be including some recipes for diabetics.
The nurse recommended the American Diabetes Association’s website (www.diabetes.org) I have already checked it out and it is very informative. There is a lot of great sounding recipes that I am going to try. It explains a lot about diabetes and carbohydrates. When I was a kid and my grandmother had diabetes, I thought that she just couldn’t have sugar and sugary foods. But there is so much more to it. There was a guy at work telling me that a sweet potato is better for a diabetic than a white potato (like a baked potato) and I’m thinking how can that be?? The sweet potato is sweet but the white potato has more carbs than a sweet potato. I’m becoming educated.
Now to get Dewayne to start exercising (and me too). I suggested walking to the nurse and she said that would be good as long as we walked for 30 minutes a day. So I think that’s what we are going to do. Wish us luck.

Today is my sister’s birthday…Happy Birthday!! Anyway, I was thinking that it has been a while since I shared a recipe and this is one of Kecia’s favorites (and this is actually one of my sister’s recipes). This is a good recipe for a Sunday dinner desert…or anytime that you want.
Chocolate Cobbler
- 1 cup flour
- 1/2 cup sugar
- 2 Tbsp. plus 1/4 cup cocoa, divided
- 1/2 cup milk
- 3 Tbsp. oil
- 1 cup brown sugar
- 1 3/4 cup hot water
In a bowl, combine flour, sugar and 2 Tbsp. cocoa. Stir in milk and oil until smooth. Pour into a greased 8-inch square pan. Combine brown sugar and remaining cocoa; sprinkle over batter. Pour hot water over top. Bake at 350 degrees for 40-45 minutes. Serve warm with ice cream.

My husband, Dewayne, has been going to the doctor for a skin infection since before our vacation. Last Wednesday when he went for a recheck, the doctor wanted him to come in for some fasting (nothing to eat or drink after midnight) blood work. He went in for the blood work this past Monday and the nurse called me on Tuesday with the results. His cholesteral and triglycerides was slightly elevated but the nurse was most concerned with the blood sugar….it was high. So the doctor wants him to monitor it.
I went by the doctor’s office this morning and got a blood glucose monitoring system. The brand is One Touch Ultra 2 and I’m hoping it is easy to use (it says it is on the side of the box) since Dewayne or I had never used one of these things before. So I got the booklet out and read all about it and how to use the monitor. So I’m hoping it will all come together when we start using it in the morning.
Anyway, the nurse wants us to keep up with the readings in the mornings (fasting) and two hours after the evening meals. And then they will decide (by the readings) if he is diabetic or not. I’m praying that he’s not.

I just got back from my niece’s birthday party. We all had a lot of fun and she got a lot of cool gifts. It was a Hannah Montana themed party with a Hannah Montana cake and gift bags. She got all kinds of Hannah Montana stuff…such as a CD, a game, some shirts, and a doll. I got her a Build-A-Bear with a Hannah Montana outfit, we are going to get it stuffed on Labor Day Monday (I can’t wait, we always have lots of fun together).
The kids played on a water slide (the big inflatable kind) and rode on the four wheeler. Of course, we had to get the new toys out and play with them too. Her daddy got her a new bicycle and the kids played on it too.
I think everyone had a really good time but I’m glad to be home. I also worked today and then went to the party, so I am pretty tired.

Today was the first day of school for the kids. Krista is in the 12th grade now and Zach is in the 9th grade. Zach is riding to school with Krista this year since they are at the same school (Well, she is at the high school and he is across the street at the ninth grade academy). It seems a little weird because this is the first time in many, many years that I don’t have to drive a kid to school. Krista and Zach both said that they had a good day and Zach said that he didn’t get lost (but who knows??).

We got back from vacation yesterday, and I am still a little tired from it. We all had a good time, even though Kecia was sick the first couple of days. The beach was closed to the public for 3 days while we were there, so we didn’t get to go snorkeling. James and Zach played in the beach and pool just about every moment we were at the condo. Kecia, Krista, and I went down with them a few times. We played a lot of mini golf and drove over to Destin one day to do some shopping. I took lots of photos while we were there…almost 300!
