Here are this week’s four questions.

#1.  Waffles. Do you usually eat frozen or homemade? I usually eat frozen but I really like homemade better.
#2.  Eggs. Do you buy brown, white, or it doesn’t matter? I buy white ones.
#3.  Oatmeal. Do you usually make instant or cooked? I make instant.
#4.  Bacon. Share instructions or a recipe that you use bacon in.

Loaded Potato Soup

  • 6-8 medium sized potatoes
  • Velveeta Cheese (16 oz. size)
  • 6 slices of cooked bacon (or you can use Real Bacon bacon bits)
  • 1 bunch of green onions, chopped
  • salt and pepper to taste

Cube potatoes (with or without skins) and put in pot, covered with water. Add salt and pepper to taste. Cook for approx. 30 mins or until the potatoes are tender. Cube the Velveeta cheese and crumble bacon while the potatoes are cooking. When the potatoes are done, add the Velveeta cheese and bacon. Continue heating until the cheese is melted, stirring frequently so the cheese will not burn. Add the chopped green onions during the last five minutes. I like to serve cornbread muffins with this soup. This soup is  a winter night favorite at our house.

Enjoy!
