Here’s a quick and easy recipe for Banana Nut bread. It’s more like a cake since you make it in a bundt cake pan.
Easy Banana Nut Bread
- 1 box of yellow cake mix
- 1 1/3 cup of oil
- 3 eggs
- 4 bananas, mashed
- 1 cup nuts, chopped – your favorite
Glaze
- 3 Tablespoons of milk
- 1 cup of confectionary sugar
Mix cake mix, oil and eggs together. Then add mashed bananas (I mash mine with a potato masher) and chopped nuts (I use pecans). Bake at 350 degrees for about 30 to 45 minutes. Check on it every 5 minutes after 30 minutes. Mix milk and confectionary sugar together and drizzle over cake.
This is a really easy recipe. My family just loves it…I have made three of them since the middle of November.

Frosted Brownie Cookies

Prep Time: 10 min Cook Time: 10 min Makes: 1 1/2 dozen cookies
Ingredients
- Crisco® Original No-Stick Cooking Spray
- 1 (15.8 oz.) package Pillsbury® Supreme Double Chocolate Brownie
- 1/3 cup Crisco® Butter Shortening, melted
- 1 large egg
- 1 (16 oz.) can Pillsbury® Cream Cheese Frosting
- Candy bits
Preparation Directions

HEAT oven to 350°F. Coat cookie sheet lightly with no-stick cooking spray.

STIR brownie mix, chocolate syrup packet, melted shortening and egg in medium bowl until evenly moistened. Scoop into 1 1/2-inch balls or drop by rounded tablespoons onto prepared cookie sheet.

BAKE 10 to 12 minutes or until set. Cool 2 minutes. Remove from baking sheet to cooling rack to cool completely. Frost or drizzle and decorate as desired.
TIP
To Drizzle Frosting: Place 1/2 cup frosting in a resealable plastic bag. Push to one corner. Cut off small tip. Drizzle frosting over cookies.
This sounds like a really good cookie recipe for the kids (and adults, too) and easy enough for the kids to make….with a little help.

Here’s a great Thanksgiving (or any time of the year) side dish. This recipe came from Kraft Foods at kraftfoods.com and I just made it for our Thanksgiving dinner at work on Thursday and it was really delicious. Here it is:
Cheesy Rice & Corn Casserole

Prep Time:
10 min
Total Time:
35 min
Makes:
8 servings, 1/2 cup each
1/2 cup PHILADELPHIA 1/3 Less Fat Cream Cheese with Chive & Onion
2 cups cooked instant brown rice
1 can (15-1/4 oz.) corn with red and green bell peppers, drained
1 cup KRAFT 2% Milk Shredded Cheddar Cheese, divided
2 Tbsp. chopped fresh cilantro
HEAT oven to 375°F. Mix cream cheese and egg in large bowl until well blended. Stir in rice, corn, 3/4 cup Cheddar and cilantro. Spoon into greased 1-1/2-qt. baking dish.
SPRINKLE with remaining Cheddar.
BAKE 20 to 25 min. or until Cheddar is melted and casserole is heated through.

This is a great recipe for a side dish (or possibly a dessert) and especially if you like pineapple. I haven’t shared a recipe lately and I thought that I would right now.
Baked Pineapple
- 2 cups chunk pineapple, drained
- 1 cup sugar
- 1 cup flour
- 1 stack pkg. Ritz cracker (or 31 crackers)
- 1 stick margarine
Combine sugar and flour, mix well with drained pineapple. Pour into well-buttered baking dish. Crush crackers, mix with melted margarine. Spread crumbs over pineapple mixture. Bake at 350 degrees for 45 mintues.
I hope ya’ll enjoy this recipe, I know I sure have. It’s making me hungry just thinking about it!!

For Thanksgiving, we either go to my aunt’s house or my mother-in-law’s house (we alternate from year to year). This year it’s to my mother-in-law’s house we go. They always have a large buffet of all the traditional Thanksgiving recipes, such as Roasted Turkey, Sweet Potato Casserole, Cornbread Dressing, Homemade Pecan and Pumpkin Pies. It makes my mouth water just thinking about all the food. I usually take some kind of dessert. I would like to take something different this year. If anyone has a simple recipe for a great tasting dessert (or any other dish) that they would like to share. I would be grateful. I’m just tired of the same old thing to the dinners. So any ideas??

I just tried a new salad dressing…it’s the Wish Bone Salad Spritzer Asian Silk Sesame Ginger Vinaigrette and I absolutely love it!! The serving size is 10 sprays and has only 10 calories and 0.5 grams of fat and no saturated fat or trans fat. It combines the flavors of soy, sesame, orange and spices, and it tastes great!!! I think I just found a new salad dressing. You can even get a coupon by clicking here. And here’s a recipe using the Asian Silk Wish Bone Salad Spritzer that I’m going to try. If you try it, let me know. It sounds great.

Easy Asian Chicken Salad
| Ingredients |
| 4 cups shredded Napa cabbage or iceberg lettuce |
| 2 cups shredded cooked chicken breasts |
| 1 large red bell pepper, cut into thin strips |
| 1 cup shredded carrots |
| 1 cup thinly sliced snow peas |
| 1/2 cup sliced green onions |
| Wish-Bone® Salad Spritzers® Asian Silk Sesame Ginger Vinaigrette Dressing |
| 1/4 cup chopped peanuts |

| 1. In large serving bowl, combine all ingredients except Wish-Bone® Salad Spritzers® Asian Silk Sesame Ginger Vinaigrette Dressing and peanuts.
2. Just before serving, spritz with Dressing and toss to coat; sprinkle with peanuts.

Here’s the Spinach Dip (like O’Charley’s but without the artichokes) that Sheri requested. I hope you all enjoy it as much as my family does. This is one recipe that I get requested to make all the time…even when we are on vacation.
Spinach Dip
- 1 pkg. frozen chopped spinach (thawed)
- 1 cup Kraft mayo
- 1 cup sour cream
- 1 1/2 cups shredded parmesan cheese
- 1 Tbsp. onion powder
- 1 Tbsp. garlic powder
Mix together mayo, sour cream, onion powder, garlic powder and 1 cup of shredded parmesan cheese (not the grated kind) and microwave until the cheese is melted (about 2 minutes). Stir in spinach and microwave an additional minute or until warm. Sprinkle remaining parmesan cheese on top. Serve warm with tortilla chips.

If you have the gang over to watch the big game then you know you’ve got to have food to munch on. A good dip to make is Cheesy Spinach and Bacon Dip. It’s quick to make and it’s really good.
Cheesy Spinach and Bacon Dip
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
- 1 lb. (16 oz.) Velveeta Cheese, cut into 1/2 inch cubes
- 4 oz. (1/2 of 8 oz. pkg.) cream cheese, cubed
- 1 can (10 oz.) Ro*tel Diced Tomatoes & Green Chiles, undrained
- 8 slices bacon, crisply cooked, crumbled
Combine ingredients in microwaveable bowl. Microwave on HIGH 5 min. or until Velveeta is completely melted and mixture is well blended., stirring after 3 min. Serve with tortilla chips and cut-up vegeatables. It makes 4 cups or 32 servings, 2 Tbsp. each.

I just wanted to wish everyone a Happy Labor Day. I hope everyone is having a great weekend. I had to work today but I have plans for the rest of the weekend. Krista and I are going to my sister’s on Sunday. On Monday, my sister, my niece, Krista and I are going shopping. And to take my niece to get her Build-A-Bear stuffed.
I got a quick recipe that somebody might want to try out this weekend. It’s for Homemade Orange Sherbert and it’s made in an ice cream freezer.
Homemade Orange Sherbert
- 2 Liter Orange Crush (you can also use sugar-free)
- 1 can of Eagle Brand milk
- 1 can of crushed pineapples (drained)
Pour in the Eagle Brand milk and the can of crushed pineapples. Then pour in the Orange Crush to the fill line of the ice cream freezer canister and stir. Then use the freezer as you would for ice cream.

Today is my sister’s birthday…Happy Birthday!! Anyway, I was thinking that it has been a while since I shared a recipe and this is one of Kecia’s favorites (and this is actually one of my sister’s recipes). This is a good recipe for a Sunday dinner desert…or anytime that you want.
Chocolate Cobbler
- 1 cup flour
- 1/2 cup sugar
- 2 Tbsp. plus 1/4 cup cocoa, divided
- 1/2 cup milk
- 3 Tbsp. oil
- 1 cup brown sugar
- 1 3/4 cup hot water
In a bowl, combine flour, sugar and 2 Tbsp. cocoa. Stir in milk and oil until smooth. Pour into a greased 8-inch square pan. Combine brown sugar and remaining cocoa; sprinkle over batter. Pour hot water over top. Bake at 350 degrees for 40-45 minutes. Serve warm with ice cream.
