Avocado Shrimp Ceviche

Its sooo good. And so healthy. And so easy to make. This is one of my favorite foods right now. I feel like in my adult life, I have always bounced between dieting and a free-for-all to be honest. And I have really struggled to find a way of eating healthy that is sustainable in the long term. Because diets are so hard to stick to, I always end up falling off the wagon and binging the eff out of foods that I was missing. I really need a long term lifestyle change when it comes to eating.

I have #PCOS and my body really functions the best on low carb. So I have tried keto and it’s great and it works but it was really hard to stick to also and not sustainable for me because it’s really restrictive. So now I am just really focusing on being low carb (but not as low carb as Keto is), eating lots of fruits and vegetables and lean meats and just healthy stuff in general and logging the foods(for now until I build up good habits) that I am putting into my body. And it’s been working so far. 🙏 It really helps to plan a little, experiment with recipes we like (I have so many saved on @pinterest) and be stocked with options of food that will keep me/us on track (the hubby and I are always do this stuff together, it makes it easier and you have someone to support you). I also don’t beat myself up anymore if I have a bad day, and just get back on it the next day. It’s hard ya’ll.
